OOOH this is a Good one!! I love salmon but sometimes get tired of it just plain!! This fiesta salsa gave it a nice crisp, summery feel! It felt healthy and looked great on my plate! My husband Brian gave it two thumbs up so I decided to share it here with all of you!!

|Fiesta Salmon ~ 21 Day Fix Dinner|
Fiesta Salmon2 Servings
- 2 4oz Salmon Filet (Skin on)
- 1 Green Bell Pepper, diced small
- 2 Roma Tomatoes, diced small
- 1/2 Red Onion, diced small
- 4 garlic cloves, chopped
- 1/2 cup fresh cilantro, chopped
- Juice of 2 Fresh Limes
- 2 Tbsp. Olive Oil
- Pepper and Pink Himalayan Sea Salt to taste.
Pre Heat oven to 450o
Rinse and pat dry Salmon filets place in baking dish (skin side down) do not let filets touch.
Combine all remaining ingredients into a bowl, spoon the fiesta mixture over top each Salmon Filet.
Bake 12 - 15 min or until fish flakes easily covered.

Serve with brown rice or quinoa, and fresh lime wedge!! I needed an extra green container for the 21 day fix so I added some steamed green beans too!!
