Hearty Hamburger Potato Soup

Eat clean Hamburger Potato Soup

Ingredients: (Servings 8-10)
2 Tbsp. EVOO (Extra Virgin Olive Oil)
1 Yellow onion
1 Red Pepper
2 Garlic Cloves; Minced
1 1/3 pounds Organic Ground Lean Beef
2 Tbsp. Organic Tomato Paste
2-32 oz. Organic Beef Stock (Homemade or store bought)
3-Large Russet Potatoes
1-8oz. Package Organic Frozen Corn Kernels
2 Tbsp. Fresh Parsley
1 Tbsp. Kosher Salt
½ tbsp. Fresh ground pepper

  1. Place large pot onto cook top. Drizzle 2 Tbsp. EVOO into bottom of pot. Heat EVOO on medium heat.
  2. Add onion, red pepper and garlic to the pot. Sauté for 3-5 minutes. Season with a pinch of season salt and black pepper.
  3. Add ground beef to onion mixture. Season with remaining kosher salt and pepper. Cook until No PINK.
  4. Skim the beef and onion mixture with a spoon to remove excess fat drippings
**If you use a 92% lean beef there is less fat to remove. Use a spoon & disregard fat drippings
  1. Add Tomato paste to beef onion mixture. Cook for 5 minutes.
  2. Add Beef Stock. Cover pot and bring to a boil. In the meantime, peel russet potatoes and slice potatoes into “thin moon shape”.
  3. Reduce to a simmer; Add potatoes. Simmer for 10-15 minutes until potatoes are soft.
  4. Add frozen corn, fresh parsley, and taste the soup. Add more salt and pepper if needed.
