Eat Clean Fathers Day Menu!!

I love a Cook out!! And What Father doesn't like a Burger!! 

I make sure I purchase the meat from a local farmer here in PA or Costco's has organic meat, so I get lean healthy beef and it is PCOS hormone Free!! 

I will have a choice of a burger bun or a lettuce wrap!! My Favorite!!

We will be outside Hopefully by the pool!! So I will serve a veggie tray with hummus for snacks and a fruit salad with my Yummy Fruit Dip!

Caprese Pasta Salad


Caprese Pasta Salad

Yield: 6 side servings
Total Time: 25 minutes

Ingredients:

  • 4 cups packed fresh basil leaves
  • 1 pound fusilli  whole wheat pasta
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 1/2 cup white balsamic vinegar
  • 1 shallot, chopped
  • 1 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 8 ounces small mozzarella balls, halved
  • 1 pint cherry tomatoes, halved
  • 2 tablespoons capers, drained

Directions:

  1. Bring a large pot of salted water to a rolling boil. Blanch basil leaves in boiling water for 30 seconds or until they turn bright green. Transfer to an ice water bath with a slotted spoon to stop the cooking, then drain, squeezing out any excess liquid.
  2. Cook pasta according to package directions until just al dente. Drain and transfer to a large bowl to cool.
  3. In the bowl of a food processor or blender, combine blanched basil leaves, olive oil, vinegar, shallot, salt, pepper flakes, and black pepper and pulse until uniform and very finely chopped. Pour dressing over pasta and stir until until evenly coated. Add mozzarella, tomatoes, and capers and toss to combine. 
  4. Refrigerate until ready to serve. Salad will keep, covered in the refrigerator, for up to 3 days, although the basil will start to discolor slightly after the first day.

Strawberry Spinach Salad


 Strawberry Spinach Salad
 

This salad is very tasty!! It is one of my family favorites!! 
Serves 2 
 

Strawberry Spinach salad Ingredients:
1/2 cup all natural  Strawberry Balsamic Vinegar with Rosemary EVOO 
 
Spinach Strawberry Salad
  • 3 cups baby spinach leaves
  • ¼ cup blue cheese
  • ½ cup chopped walnuts
  • 1 cup sliced strawberries
Instructions
In a small bowl stir together all the ingredients for the vinaigrette. Set aside.
In a large bowl toss together the spinach, blue cheese, walnuts, and strawberries. 
Just before serving, drizzle the vinaigrette over the salad.
