Yummy Crispy Quinoa Bake

Crispy Quinoa Bake

1 cup quinoa, uncooked
1 tablespoon plus 2 teaspoons extra virgin olive oil, divided
2 cups chicken stock
1 cup onion, diced (about 1 medium)
1//2 green pepper, chopped
2 cloves garlic, finely chopped
1 cup zucchini, cubed (about 2 small)
1 15 ounce can black beans, rinsed and drained
1 4 ounce can diced green chiles
1 28 ounce can diced tomatoes, drained
1 cup frozen corn
1/2 teaspoon ground cumin
1 teaspoon oregano
1 teaspoon chili powder
1/2 lime, juiced
2 cups shredded monterey jack cheese
Preheat the oven to 375ºF. Spray a 9x13 baking dish with cooking spray. Set aside.
Place the quinoa in a fine mesh strainer and rinse thoroughly with cool water for at least two minutes. Drain. In a medium saucepan, heat 2 teaspoons olive oil over medium-high heat. Add the quinoa and cook, stirring, for about one minute. The quinoa should begin to dry out and pop a bit. Add the chicken stock. Stir and bring to a boil. Turn the heat down to low and cook, covered, for 15 minutes. Remove the pan from the heat and let stand, covered, for 5 minutes.
Meanwhile, in a large skillet, heat 1 tablespoon olive oil over medium heat. Add onions and peppers and cook, stirring occasionally until soft, about 7 minutes. Add garlic and zucchini and cook 3 more minutes.

Fluff the quinoa with a fork and place it in a large bowl. Add onion mixture, beans, green chiles, tomatoes, corn, cumin, oregano, chili powder, lime juice, and salt to taste. Mix thoroughly and transfer to prepared baking dish. Bake 30 minutes, top with cheese, and bake 10 minutes more or until melted and just beginning to brown.

These are all words that I use on a daily basis.  I use these words with myself, with my customers and with my team of coaches.  Everything we do in life is based on knowing what the end result is going to be.  We evaluate every decision we need to make by looking at all the angles, analyzing the risks involved and then going with the safest option.  Why do we always go with the safest option?  I think a lot of times its the option that everyone else takes, it's the one that no one will question what you are doing, you won't be criticized or questioned for your decision!  But over the past 3 years I have found that if you want to do EXTRAORDINARY THINGS then you have to be willing to put the EXTRA in ORDINARY!

If you sat me down 3 years ago and said Sara you are going to be a successful Coach in Beachbody I would of laughed at you!   I would of said, "Man that would be awesome!"  but I wouldn't of thought it was possible.  When my everyone told me that this was a waste of my time, what if I would have listened?!  What if I didn't write the first blog post, share my transformation story, post my recipes EVERY SINGLE DAY!  What if I didn't teach you how to plan your meals?!  Every decision that I have made over the past 3 years have shaped my life, my personality and ultimately have attracted all of you to this point right now!  Did I know it was going to be like this.....NO!!!!! 

But did it lead me on the most fulfilling journey of my life?!?!  HELL YEAH!!!!!! 

I know that not everyone is meant to be a Beachbody Coach but what if you are?!  What if you are sitting here right now wondering what it would be like to help other people reach their health and fitness goals?  What if you could be just like me!!!! 


Bottom line A real person with a HEART OF GOLD that wants to see others succeed!

That is all you need!  But then if you have drive to be successful now comes the HOW?!?!  How do I do it?!

Well, that is not for you to worry about!  That is where I come into play!  When I started as a coach there was no road map, no coach apprenticeship program, Emerald to Diamond Group or Leadership Team!  There was just a team of coaches trying by trial and error to get the perfect system in place!  Now I have tried and tested my own system for training coaches and because I didn't give up, didn't let a little obstacle get in my way I am here!

New Coach to 2 Star in 1 year, then 2 Star Diamond coach with a team of coaches in 2 1/2 years!  Currently a coach in the network with the fastest growing team in the company!  I am literally a Jack of all trades, Skintech from Pittsburgh with a passion for helping others!  When you write it out there it sounds crazy.  I mean seriously I know you are thinking I paid someone to get here or had some help along the way!  But I can tell you 100% cross my heart I did this on my own!

Why am I a coach?  I decided to become a coach in December of 2011 because I had started my fitness journey with P90X and my beachbody coach had provided me with motivation and accountability to get fit and change my life.  I lost 30lbs doing P90X and have been able to lose over 70 pounds with in home fitness and challenge groups!! 
I have learned so much about eating healthy and exercise that I wanted to share my journey with others.  I have so much information that I need to help others with their struggles.  Now I look back and can't believe how far I came.  There were days that I didn't think I could do it anymore and I wanted to give up.  But because of my beachbody support group and coach I kept pushing through and pushing play each day.  I would hit plateau's in my weight loss but with the help of my group I didn't give up.  I eventually reached my goal after 90 days!  I became a coach because I wanted to order Shakeology and wanted to get the discount.  Oh and did I mention you get a 25% discount on all Beachbody products...BONUS!  Once I started drinking Shakeology everyday the weight fell off even faster.  I started telling other people about what I was doing and voila....I was encouraging others to try Shakeology and the fitness programs.  I started blogging and posting daily motivational tips on facebook and people were interested in what I was doing.  I started to see that I was having a positive influence on others and I wanted more.  I was not only doing my workouts each day to better myself and my health but now I knew that others were watching and I had to stay accountable, I couldn't fall off the horse because I don't want to let others down.  It became a way of life, eating clean and exercising and now I wouldn't even think of it any other way.  It's amazing that I couldn't even go 1 day without cheating with food and now I can go an entire week and not cheat once.  I also decided to be a coach because I could definately use the extra income, a commission based salary at the Spa can be  limiting at times.   Now being a beachbody coach has allowed me to work at home, and travel all while earning extra income.  
I am so passionate about what I am doing and I love waking up early every morning to do my workouts and provide my followers with healthy eating tips and exercise information.  People always tell me they can't believe I am doing this for free, but YES I absolutely love helping other people so free is always better.  I feel like people are always hesitant to pay for something until they have tried it or see that other people have gotten results.

11 Healthier Versions of Your Favorite Condiments

Condiments are probably the unsung heroes of many of your favorite meals. After all, what is a hamburger without a little something sweet or savory spread on the bun? The trouble is, some condiments can also be the secret villains when it comes to being healthy and getting the results you want. Many are high in unhealthy fats and calories and some are spiked with loads of added sugar (in the form of high fructose corn syrup), artificial ingredients, and salt.
But, all is not lost. Though you'll always want to double-check the ingredient list for anything weird, some condiments are usually healthy. Those include mustard, wasabi, and hot sauce. For those that aren't (we're looking at you ketchup), we found a few store-bought products that make the cut (click here to see the beachbody list.)
However, making your own tasty condiments is easy and fast. And most can be made with ingredients you already have in your kitchen! Plus, you'll see to it that every ingredient you add is natural and that there isn't anything in your "special sauce" that doesn't belong.

The ketchup industry tried to reinvent their product as a health food by advertising that it contains the antioxidant lycopene. They were hoping we'd ignore the fact that it still usually contains high fructose corn syrup and mysterious "natural" flavoring. Sorry, but we're not buying that squeeze bottle. Our good, old-fashioned ketchup recipe uses tomato sauce, vinegar, and a little coconut sugar or maple syrup. Want to come up with your own variation? Try adding curry or allspice!

Chipotle Ketchup

Chipotle ketchup is all the rage in upscale burger restaurants or "gastropubs." Now you can make this spicier version of classic ketchup at home. Serve with burgers, meatloaf, or baked sweet potato wedges.

Ranch Dressing

Ranch dressing has a reputation for being liberally poured on everything from salads to French fries to pizza. But have you ever read the label? A modest serving of 2 tablespoons will add 145 calories and 15 grams of fat to your otherwise healthy salad. Low fat and nonfat versions typically have extra salt, sugar, and artificial ingredients. Use our recipe to make a healthier and better-tasting version from scratch that has only 30 calories and 2 grams of fat per serving. It's made from a blend of dried spices that you can store, so whipping up a new batch of dressing takes seconds. Bonus: you can use the spice blend to season meat or as a delicious seasoning for corn on the cob.


Chimichurri is a vibrant green sauce from Argentina made from crushed garlic and fresh parsley or cilantro. Then, all of those ingredients are submerged in olive oil. Our recipe uses less olive oil and has only 25 calories per serving. It's my favorite topping for grilled fish and it takes any sandwich to another level. Try a spoonful on cooked veggies!


Once you've tasted our recipe for Homemade Basil and Walnut Pesto, you won't want to buy packaged sauce again. It adds fresh, basil flavor to pastas, vegetables, and makes any sandwich taste gourmet. If you're feeling fancy, try making it with a mortar and pestle instead of a food processor. It'll give your pesto an even brighter flavor and silkier texture. Our recipe is fresh and healthy, but pay attention to the amount you're using. One serving adds 82 calories to your meal.

Thousand Island Dressing

Like Ranch, Thousand Island dressing is not typically friendly to your waistline. It has a whopping 11 grams of fat and 111 calories in each serving. And, it's easy to go overboard. With our recipe, you can spread it on your burgers and dress your salads without guilt, as it's just 72 calories per serving. Grab a handful of baby carrots and you've got a healthy snack!


This versatile Greek yogurt sauce tastes as cool as the cucumbers it's made from. Using nonfat yogurt makes it much lighter than traditional tzatziki and fresh mint and dill give our recipe extra zing. Try it on grilled meats, spicy foods, or use it to wake up your baked potatoes!

Chunky Salsa

Salsa is said to be America's most popular condiment and it's easy to understand why. (Sorry, ketchup.) It tastes great on just about everything, from eggs to fish to turkey burgers. When tomatoes are in season, nothing beats homemade salsa. Make it as mild or spicy as you like by adding diced jalapeño or serrano chilies!


Guacamole, it's not just for chips! I'll be the first to admit, I have a guacamole addiction. I'll put it on my whole grain toast in the morning with egg whites, dip raw veggies in it in the afternoon, and eat it with beans and rice for dinner. Avocados are an excellent source of omega-3 fatty acid, which gives you shiny hair, youthful skin, and helps your brain function. Our recipe adds spicy chili peppers!

Homemade Hummus

Did you know that you can whip up a bowl of deliciously smooth hummus in under 5 minutes, and it'll taste even better than the stuff that comes in a plastic tub from the grocery store? Made from garbanzo beans, tahini (sesame paste), and freshly squeezed lemon, hummus is as healthy as condiments get! It is high in calories, but it's also nutritionally dense and has 3.5 grams of protein per 1/4 cup. Bring it as a healthy snack to your next party, spread it on sandwiches and wraps, or use it to make these delicious Deviled Eggs.

Honey Mustard Dipping Sauce

Tangy mustard and sweet honey make a perfect pair. Bottled honey mustard sauce can have extra artificial sweeteners and preservatives, and be high in fat. Our recipe keeps it super simple and fat free. Drizzle this sauce on salads, sandwiches, and when you're craving something crunchy, try it with these Chicken Fingers

Have you ever thought about the effects of food on the skin?

Memorial Day weekend brought barbecues, picnics and beach parties, which means that despite summer's official start on June 21, the season is already underway for many of us. But before you toss back more hot dogs, chips or beer, think about how it might affect how you look and feel -- and no, we don't mean your waistline.
"It's not just the sun that can age your skin," Paula Simpson, a biochemist and holistic nutritionist who specializes in supplement formulation for skin health, told HuffPost. "Diet influences skin at the cellular level, and since skin is our largest organ, it's also the first to show nutrient deficiency."
In order to keep a healthy glow inside and out this season, Simpson stresses eating well and hydrating correctly (in addition to slathering on sunscreen, of course). Read on for her list of foods that will help you look and feel your best all summer long.
1. Watermelon 
This symbol of summer is around 90 percent water, which hydrates the body. "It's loaded with vitamin C, which is required for healthy collagen production," Simpson said. Its antioxidant properties make it "a free radical scavenger," she says, which helps prevent signs of aging.
2. Berries
Fresh produce like blackberries, blueberries, raspberries and strawberries are delicious in their prime, but Simpson really loves them because they're packed with antioxidants, which can protect skin from the damaging effects of the sun.
3. Pineapple 
Along with vitamins and minerals, this tropical fruit contains bromelain, thought to fight inflammation. Lessening inflammation may bring some comfort for people with sunburns, Simpson says.
4. Citrus Fruits

Oranges, grapefruits, lemons, limes -- name a citrus fruit and it's probably good for your skin, says Simpson. Their vitamin C and amino acids, like proline and lysine play a role in collagen production, which can keep skin looking young.
5. Cucumber
We've all seen cucumber used to relieve puffy eyes, but Simpson points out you should be consuming cukes for healthy skin, too. Cucumbers are mostly water, so they hydrate and replenish the body and skin.
6. Tomatoes
Simpson calls tomatoes "the perfect food to protect skin cells," thanks to theirlycopene, which not only promotes collagen production but also fights off fine lines and wrinkles.
7. Dandelion Greens

'Tis the season for salads, and if dandelion greens aren't already a part of your mix, they should be, notes Simpson. You'll get more than your daily dose of vitamins A and K, as well as a good deal of collagen-producing C. It's also used for skin conditions like acne and eczema, according to WebMD.
8. Salmon 
Seafood by the beach is a popular treat this time of year, and Simpson suggests ordering salmon if you want your skin to appear dewy and plump. The omega-3 fatty acids in the fish are a key component of how skin cells regulate oil production.
9. Coconut Water

Instead of reaching for sugar-laden sports drinks, Simpson encourages getting electrolytes from coconut water. "It supports youthful and supple skin," she says, thanks to it's hydrating powers and its hearty dose of potassium, which can help deliver more nutrients and oxygen to the skin by boosting circulation, Prevention reported.
