No Velveeta No Worries!! Clean Eating Super Bowl Snacks and homemade BLOCKLESS Velveeta Cheese!!

That’s right, the Super Bowl is quickly approaching and although our team (and by our team, what I really mean is my Team, husband is NOT a football fan.... I know!!!  – the Steelers) didn’t make the cut, we will still be eating Super Bowl food on Super Bowl Sunday.

1. Homemade Velveeta Recipe

Homemade Velveeta

Makes about 4 cups.

Ingredients
  • 16 oz (1lb) Natural American cheese
  • 8 oz Sharp Cheddar cheese
  • 1 Cup milk
  • 1 1/2 teaspoon cumin powder
  • 1 10oz can diced tomatoes & green chilies -drained* (optional)

Instructions
Microwave directions:
  1. Place all ingredients inside a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir every 1-2 minutes. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
  2. Serve immediately as a dip with tortilla chips. You can cool this in a loaf pan and refrigerate for a week to use as you would use traditional Velveeta.
Crockpot directions:
  1. Place all ingredients in a small crockpot (that will fit at least 4 cups of liquid). Turn crockpot on high for 2.5 hours. Mix ingredients every hour to prevent cheese from sticking to walls and possibly burning. Reduce heat to lowest setting and enjoy!
 Notes:
  1. Not all white American cheeses are made equal. Check ingredients because some… well, don’t really expire. If it says “cheese product” it’s probably not real. I used Land O’Lakes brand in our test. Yes, I know… not the best but many of you asked for it. After tests, there is just no way to get around it. Get the best quality you can find and afford. For both recipes, I purchased the cheese from the deli counter in a big chunk –don’t use sliced cheese.
  2. *To make this as a true Velveeta replacement, take out diced tomatoes and green chilies and add ½ cup additional milk. Cool and refrigerate or freeze in 1-cup portions. Reheat every 30 seconds until creamy and hot. Use as you would cook with Velveeta.
Notes
*the diced tomatoes & green chiles is optional but it adds a lot more flavor. For plain velveeta, omit.

Nothing scream Super Bowl like a plate of fresh baked Clean Eating Buffalo Wings!!


2.  BUFFALO WINGS (or anything made with Buffalo sauce!)
When I think Super Bowl, wings are the first thing that come to my mind.  Sure some people deep fry their wings but not clean eaters like you and I.  And the great think about Baked Buffalo Wings is that they are much easier than dealing with a deep fryer, they taste absolutely delicious, and just so happen to be better for you.  Take that, deep fried wings!  I like the these for a smaller group and often times make them for a week night meal regardless of whether or not we are watching football.
And if you like buffalo wing sauce but don’t eat meat the these Clean Eating Buffalo Cauliflower Bites may be just what  the doctor ordered. I will post the recipe below for you and my animal loving Sister!!

Wings

  • Preheat oven to 400°. Set a wire rack inside each of 2 large rimmed baking sheets. Place all wings and 1/2 of the ingredients for sauce or Local favorite Quaker Steak take home sauce like I do in a large bowl; toss to coat. Divide wings between prepared racks and spread out in a single layer.
  • Bake wings until cooked through and skin is crispy, 45–50 minutes.
  • Line another rimmed baking sheet with foil; top with a wire rack. Add half of wings and toss to evenly coat. Place wings in a single layer on prepared rack and bake until glaze is glossy and lightly caramelized, 8–10 minutes.
  • Toss remaining half of wings in Buffalo sauce. Serve immediately (no need to bake).

4. HUMMUS
Hummus is very simple to make at home!!
This is a fun way to do something a bit different in the world of hummus and would be delish with some baked pita chips or of course, raw veggies.

Roasted Red Pepper Hummus

Yield: Serves 8 as an appetizer

Ingredients:

  • 2 cloves of garlic, minced
  • 1 15 oz. can of garbanzo beans, drained and rinsed
  • 1/3 cup of tahini
  • Juice of 1 lemon
  • 1 12 oz. jar of roasted red peppers
  • 1 tbsp. of extra virgin olive oil
  • A big fat pinch of salt

Directions:

Place the garlic into food processor and pulse until minced.
Add the garbanzo beans, tahini, lemon juice, and oil.  Pulse until smooth.  Toss in the roasted peppers and salt and pulse until everything is incorporated.
*If you want to cut back on the calories and fat a bit, eliminate the olive oil and reduce the tahini to 1/4 cup.  In order to make up for the lost liquid, add a couple of tbsp. of the liquid from your roasted pepper jar into the hummus!
5. JUST SOME RANDOM FINGER FOODS
Now this one may surprise you but yes, in my book, there is a way to fit Bacon Studded Potato Skins into a clean lifestyle.  Hey everything in moderation guys and besides these skins are 100% real food. So oh yes, enjoy!


Bacon Studded Potato Skins

Yield: Serves 4-6
Prep Time: 30 minutes
Cook Time: 1 hour 30 minutes
Total Time: 2 hours

Ingredients:


  • 6 small to medium sized russet baking potatoes (about 3 pounds)
  • Cooking spray
  • Garlic powder
  • Salt & pepper
  • 5 strips of reduced fat bacon
  • ½ cup of part skim shredded cheddar cheese
  • 1/2 cup plain non-fat Greek yogurt
  • 3 green onions, thinly sliced, including the greens of the onions

Directions:

First you’ve got to bake the potatoes, so scrub the potatoes clean, poke some holes in them, and then bake them in a 400 degree oven for about an hour or until done.
While the potatoes are cooking, cook the bacon strips in the microwave or in a frying pan (I prefer the microwave). Make sure you get them good and crispy! Drain on paper towels. Once they have cooled a bit crumble them up with your fingers.
Remove the potatoes from the oven and let cool enough to handle.  Cut in half horizontally.  Use a spoon to carefully scoop out the insides, saving the scooped potatoes for another use, leaving about 1/4 of an inch of potato on the skin.
Lay potatoes skin side up on a baking rack on a rimmed baking sheet.  Spray each potato with cooking spray and then season with salt, pepper, and garlic powder.  Cook for about ten minutes and then flip skins over and season the inside before popping back into the oven for another ten minutes or until your skins are nice and crispy!  Remove from the oven and let cool long enough to handle.
Sprinkle a little cheddar cheese and crumbled bacon on each potato skin and then back in the oven they go. Cook for another two minutes or until the cheese is melted and bubbly and then remove from oven.  Use tongs to place skins on a serving plate.  Add a dollop of  Greek yogurt to each skin and sprinkle with green onions.
Serve immediately.
Serves 4 to 6.

Broccoli And Chicken Quesadillas

Yield: Serves 1-2
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients:

  • 2 ounces of pre-cooked shredded chicken
  • ½ cup of steamed broccoli, chopped up
  • 1/3 cup of part skim shredded mozzarella cheese
  • 1 whole grain tortilla (I like Ezekiel)
  • 2 tbsp plain, no fat Greek yogurt
  • 1 tsp red pepper sauce

Directions:

Combine Greek yogurt with hot sauce and set aside.
Heat chicken and broccoli in a large non-stick pan over medium heat.  Once heated through, remove from the pan and place in a medium bowl.
Toss chicken and broccoli with salt, pepper and garlic powder and then set aside.
Place tortilla in the hot pan and allow to heat through on one side. Flip the tortilla and sprinkle half of the cheese over one half of the tortilla.  Top cheese with broccoli and chicken and then sprinkle the rest of the cheese over the top.
Using a spatula, fold the tortilla over on to itself (into a half moon) and top with something heavy (i.e. a weighted pan or my personal favorite, a teakettle).  Allow to cook for a minute or two, or until the bottom is lightly browed.  Flip the tortilla and cook for another minute or two on the opposite side.
Remove  the Quesadilla from the pan and allow to cool for a minute or so before cutting into wedges.  Top with spicy yogurt and enjoy!!
6.  CLEAN+DELICIOUS DIPS
This is one of my personal favorites.


High-Protein Spinach and Mushroom Dip
Chips and dip are the most classic party food. Don't throw away your clean diet by dipping Doritos into microwaved Velveeta cheese and salsa. Instead, try this protein-filled dip with some brown rice crackers.

Ingredients
  • 1 cup 2% cottage cheese
  • 1/4 cup egg beaters or egg whites
  • 1 tbsp minced garlic
  • 1 cup mushrooms, chopped
  • 1/2 cup chopped spinach
Directions
  1. In a large pre-sprayed pan, saute the mushrooms and spinach over medium heat for about 10 minutes, or until the mushrooms are tender.
  2. Blend cottage cheese, egg whites, and garlic until smooth.
  3. Transfer the cottage cheese mixture to a large bowl and stir in the spinach and egg beaters.
  4. Microwave for approximately 1 minute or until warm throughout.
  5. Enjoy with rice crackers!

7.Roasted Chickpeas w/ Indian Spices

Crunchy Snacks

Great to put in a bowl on the coffee table for snacking!! Clean of course!!



Yield: 2 servings
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients:

  • 2 cans organic garbanzo beans
  • 2 tsp curry powder
  • ½ tsp ground ginger
  • ¼ tsp Garam Masala
  • 1 tbsp of olive oil
  • 1 tsp kosher salt

Directions:

Preheat oven to 400.
Drain and rinse the beans under some cold water.  Place beans on a kitchen towel and roll them and pat them until they are completely dry.
In a small bowl, toss together curry powder, garam masala, ginger, and salt.
Place dry garbanzo beans in a large bowl and toss with olive oil.  Sprinkle spice mixture over the beans and toss until all the garbanzo beans are evenly coated with the spices.
Toss onto a rimmed baking sheet and bake for about forty five minutes or until the garbanzo beans are nice and crunchy.
Toss into a serving bowl and enjoy!

Roasted Buffalo Cauliflower Bites

VEGGIE Lovers unite!!



Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Ingredients:

    • 1 head of cauliflower, washed and broken up into small florets
    • 1 tsp. extra virgin olive oil
    • 1 tsp. garlic powder
    • 1 tsp. paprika
    • 1 tsp. chili powder
    • ½ tsp. kosher salt
    • 2 tbsp. of your favorite hot wing sauce

Directions:

  • Pre heat oven to 425
    Toss cauliflower with olive oil and distribute evenly.
    Combine garlic powder, paprika, chili powder, and salt in a small bowl.  Toss spice mixture over cauliflower and mix well, making sure all the cauliflower is coated in the spices.
    Spread cauliflower out on a rimmed baking sheet a roast for 20 minutes.
    Toss with wing sauce and serve with your favorite blue cheese dressing for dipping.  Enjoy!
    Makes about 2 cups.
