Healthy Carrot Cake Muffin


Here is a healthy carrot cake muffin recipe. MADE IT LAST NIGHT AND IT WAS SUPER DELICIOUS.
1 mashed banana (about 1/2 cup)
1/4 cup unsweetened apple sauce
1 cup grated carrots
2/3 cup egg whites
3/4 cup oat flour
1 cup oats (I used quick cooking)
1/4 cup low fat cottage cheese
1/4 cup non fat Greek yogurt
1/4 cup stevia in the raw
1/2 cup Vanilla protein powder
1/2 tsp Vanilla extract
1/2 tsp pumpkin pie spice
1tsp Cinnamon
1 tsp baking powder
1tsp baking soda
Preheat oven to 35oF.
Combine all the ingredients in large bowl and mix together. Divide batter into muffin pan (sprayed with olive oil cooking spray). This will give you 12 muffins.
Bake 15-20 minutes.
87 calories, 12.6g carbs, 1.1g fat, 6.6 gr of protein
